Ingredients

  • 2 cups whole wheat flour 
  • 1/2 teaspoon salt 
  • 1/2 teaspoon baking soda 
  • 1/2 teaspoon baking powder 
  • 3 large eggs 
  • 1 teaspoon vanilla extract (optional) 
  • 1/4 cup maple syrup 
  • 1 cup chopped nuts (walnuts, almonds, hazelnuts) 
  • 1 cup of chopped dried fruit (dates and/or figs) 
  • 1 cup of chopped dried fruit (cherries, cranberries, apricots) 

Instructions

Preheat oven to 350F. Grease a 9-inch loaf pan and spread parchment paper at the bottom.

In a bowl, combine all dry ingredients and mix well. Set aside. In another bowl, beat the eggs and stir in vanilla and maple syrup.

Add the chopped dried fruit and nuts into the flour mixture. Stir until nuts and fruit are well coated with flour. Stir in the egg mixture to the flour-nut mixture until well combined. Pour the batter into the prepared loaf pan, pressing the batter down with the back of a spoon. Bake in the preheated oven for about 60 minutes.

Remove from the oven and let it cool completely. Keep wrapped to maintain freshness. It lasts even longer when kept in the fridge.

    This is what REAL Fruit cake should be. It looks wonderful. I think the folks early on would wrap it in a rum soaked cloth for storage. Can't wait to try this. Thank you for sharing.

    Thank you for the post! your bread Looks soft in the picture, I just did mine and came out very dry, hard and crumbly on the surface. I followed the recipe exactly, what do you think went wrong. Knowing that when I added the wet ingredients, it was very hard to mix them all together.

    This bread was a bit dry, I remember, but it should be this way. Id does not have any butter or oil. I did not mention in recipe that you need to use 3 LARGE eggs, maybe this is the reason. We had that bread for breakfast, toasted with coffee. I will try to make it one more time, let you know. (Sorry for any problems, it was one of my first recipes on a blog)

    Thank you for the speedy reply :). I did actually use large eggs but maybe my measurements were off a bit with the flour. I will definitely try again because I loved it and also it could be my oven. However I would love to hear how it came out with you the second time :):). Have a lovely day :).

    Baked this bread earlier this afternoon. Had 2 slices, I toasted one and the other as is. Loved both. Since this is a very dense bread, I added 2 tablespoons of greek yogurt and used agave syrup. Thank you so much for sharing. Looking forward to have this for breakfast tomorrow with coffee. Easy recipe.

    I threw this together for breakfast this morning. I didn't have wheat flour so i just used what i had on hand which was white flour. I also used hazelnuts, almonds, dried cranberries and dried pineapple. This was easy, so pretty and so delicious. Will definitely make this many more times.

    So there are 2 cups of dried fruit and 1 cup of nuts and not much moisture from the two wet ingredients. This could explain the comments about the bread being dry.

    My mixture did not work out so well. It was so thick I couldn’t even get all of it mixed. Ended up added some orange juice. Everything was exactly as the recipe called so not sure why. It turned out good though. A bit dry but a lovely flavor

      I love the bread, especially when it toasted. Next time I will add some vegetable oil, so it would not be so dry. Adding some orange juice is a great idea, brings more flavors.
