Using ancient flours and grains while cooking allows you to incorporate new flavors and health factors into your recipe. Flours from so long ago come with a slew of health benefits that the recipe would be missing if you had used regular flour.
Teff flour, an ancient flour stemming from Ethiopia, is a gluten-free alternative that is starting to become more widely used. Teff is delicious, hearty, and packed with ancient health benefits
Because teff is gluten-free, it is an incredible substitute for those with celiac disease or any other form of gluten sensitivity. Even without sensitivities to gluten, you may still find improvements in your digestion of this flour. typical gluten in a normal body creates inflammation at a low-level in your body, so the switch to a gluten-free flour may have you find unexpected relief.
Another huge positive of teff flour is its natural abundance of fiber. Average teff flour can contain up to five times the amount of fiber typically found in flour, further promoting the health benefits of using teff over typical flour. The extra fiber is great for promoting digestive regularity, as well as helping to clear your digestive tract of toxins and food waste.
Finally, teff has such a unique flavor that is incredible for this recipe. The flavor is often described as nutty and similar to hazelnut, or even sometimes chocolate. I used teff for this recipe because of this deep flavor profile that is going to add complexities to the dish.



Gluten-Free Brownies with Teff Flour (Vegan, Dairy-Free)
Ingredients
- 1/4 cup ground flax seeds mixed with 1/2 cup warm water
- 1/2 cup brown sugar
- 1/2 cup raw sugar
- 1/4 cup avocado oil
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1 cup Teff Flour
- 1/2 cup cocoa powder
- 2 tablespoons hemp seeds for the top of brownies, optional
- dried rose petals for the top of brownies, optional
Instructions
Preheat the oven to 350 F. Oil an 8 x 8-inch brownie pan and/or line with parchment paper.
Mix the flaxseed mixture, sugars, oil, vanilla together in a medium-sized mixing bowl. Then mix the teff flour, salt, and cocoa powder in a small mixing bowl.
Add the dry mixture to the wet and mix well. The batter will be very thick.
Scrape the batter out into your prepared pan and spread evenly. Sprinkle the hemp seeds over the top and press lightly in with a spatula.
Bake for 30-35 minutes. Sprinkle dried rose petals on the top (they will give a very nice aromatic cranch).
Notes
You can use another mild oil instead of avocado oil, like grape seed oil, or use mashed avocado to make them no oil added.
