This is a probably the last recipe that I am going to post for next few weeks. My dear readers, after six month of planning, calculating, drawing and thinking, we have finally started to renovate our kitchen. Let me tell you, it is a very hard process and we are only at the beginning stage.
Broiled Salmon Wrap with Mustard
Ingredients
- 1 1/2 - 2 lb. salmon, cut into fillets
- salt and freshly ground pepper
- 2 Tbsp. olive oil
- lemon juice from 1/2 lemon
- 1-2 tomatoes, sliced
- lettuce leaves
- 4 wraps of your choice
- 2-3 Tbsp. mustard
- lemon wedges, to serve
Instructions
Preheat the oven to broil. Set an oven rack about 4-5 inches from the broiler element. Lightly grease a baking sheet with olive oil. Place the salmon on the baking sheet and squeeze lemon generously over the salmon. Drizzle lightly with olive oil and then sprinkle generously with salt and pepper. Broil for about 8-10 minutes, until the salmon barely flakes with a fork.
Spread the mustard on a wrap, put a peace of salmon on a center. Add few tomato slices and lettuce leaves. Roll up your wrap and enjoy! Serve with the lemon wedges.
