Stuffed Chicken Breasts with Sausage Meat

The best-known family dish is the chicken. One reason chicken is so popular is that its tender, bland-tasting meat can be seasoned in hundreds of ways. Almost any spice or herb may be used to give aroma to chicken. Enjoy my Stuffed Chicken Breasts with Sausage Meat recipe, this is one of my favorite way of preparing chicken for our Sunday dinner.

Stuffed Chicken Breasts with Sausage Meat

Ingredients

  • 2 big chicken breasts, skin off, (don't butterfly them) 
  • 1 lb. sausage meat
  • 1 small white onion, minced
  • 3 garlic cloves, minced
  • 3-4 raw bacon slices
  • salt and freshly ground pepper, to taste

Instructions

Preheat an oven to 400° F.

In a medium bowl, mix together sausage meat, onion, and garlic. Set aside.

Lay together the chicken breasts on a flat cutting board. Very lightly season it with salt and pepper. Spread your raw sausage mixture over the chicken. Set your 4 bacon slices on a top of your stuffing. Using kitchen twine, tie the chicken breasts with stuffing and bacon crosswise at even intervals - 2 times. Season the outside of the stuffed chicken with salt and pepper. You don't need to rub with oil or butter, it will roast perfectly without extra fat.

Place the stuffed chicken in a shallow ovenproof pan that fits the chicken comfortably without squeezing it in and roast for about 1 hour and 15 minutes, or until the chicken has an internal temperature of 160° F. Remove from an oven and allow to rest in the pan for 10 minutes, before slicing. Remove the twine, slice and serve.     That is a good way to make a dry chicken breast more moist. No one in my family likes chicken breast, we all go for a dark meat, and I have to be creative each time with the breasts as I always buy a whole chicken. Great recipe! And I am glad you are back and running, my friend! 🙂
