The flavors of the spiced turkey kebab with fresh tomato salsa are wonderful. Perfect for any Summer day.
Turkey Kebab over Pita with Fresh Tomato Salsa
Ingredients
- 1 lb. ground skinless, boneless turkey breast
- 1 onion, peeled, finely chopped
- 1 garlic, crushed
- 1/4 tsp paprika
- 1 tsp coriander seeds, toasted, crushed
- salt and freshly ground pepper
- vegetable or sunflower oil for cooking
- For the fresh tomato salsa:
- 1 tomato, chopped
- 1/2 avocado, chopped
- 1 small red onions, chopped
- 1 Tbsp. chopped fresh parsley
- 1/2 garlic clove, crushed
- juice of 1/2 lemon
- salt and freshly ground pepper
Instructions

Mix all the ingredients for the kebabs in a bowl with two tablespoons of water. Season the mixture to taste and chill for one hour.

Divide the mixture into 8 evenly sized kebabs, then with wet hands, shape each kebab around a wooden skewer in a sausage shape; brush with oil.

Heat the pan grill until hot, place the skewers on it and cook for about 7-10 minutes, turning them regularly.

For the salsa: mix all the ingredients together, leave to infuse for an hour in the refrigerator.

Serve over toasted pita with tomato salsa.
