Carrots and green apples, both of them crunchy and sweet, are a winning combination in this tangy salad. Serve this salad as an accompaniment to a smoked turkey sandwich or grilled chicken, shrimp or fish. Look for interesting varieties of carrots in different colors, and use a Thin Julienne Slicer to slice them perfect thin strips.
Vitamin Carrot & Green Apple Salad with Lime Vinaigrette
- 1 large green apple, thinly sliced
- 3 carrots, peeled, shredded or thin julienne
- fresh herbs (parsley, cilantro)
- 3 Tbsp. fresh lime juice
- 2 Tbsp. extra virgin olive oil
- 1 tsp minced garlic
- 1/2 tsp ground coriander
- 1/2 tsp paprika
- 1/2 tsp kosher salt
In a small bowl add the lime juice, olive oil, coriander, paprika, garlic, and salt and whisk until blended. Set the lime vinaigrette aside.
In a bowl mix together carrots, apple, and fresh herbs. Pour the vinaigrette over and toss gently to mix.
Divide the salad evenly among small plates or bowls. Serve it with a smile 🙂
