The spring is finally here and I feel like eating more vegetables, fresh fruits, and berries. I start mornings with a glass of freshly made juice and my lunch becomes lighter and healthier. I present this special salad which is good for any diet. It has few ingredients but many flavors. I use all organic vegetables and highly recommend the same in your cooking. The dressing is slightly sweet with a touch of cayenne pepper, but you may change your ingredients if you’d like. My husband had this salad with broiled salmon for dinner and he was very pleased. Enjoy these simple, but nutritious recipes.


Green Salad with Plum Sweet & Spicy Dressing
Ingredients
- For the salad:
- 1 avocado, peeled and diced
- 2 small green zucchini, cleaned and diced
- 2 small cucumbers, cleaned and diced
- fresh mint
- 1 medium beet, peeled and shredded
- a squeeze of fresh lemon
- For the dressing:
- 1/4 cup sesame oil
- 1/4 cup virgin olive oil
- 2 ripe plums, diced
- juice of 1 lemon
- pinch of cayenne pepper
- 1 tsp fresh ginger root, grated
- 2-3 garlic cloves
- 1/2 tsp pink Himalaya salt
Instructions
To make the salad: In a medium bowl mix the avocado, zucchini, cucumbers, and fresh mint. Add the lime juice and stir to mix well. Serve immediately on a plate and top with the shredded beets. Add the dressing to your taste.
To make the plum dressing: In a food processor, combine all ingredients. Puree until smooth and emulsified. Season with salt and pepper. Transfer the dressing to a small bowl, cover and refrigerate until ready to serve.
