Romaine Salad with Couscous & Soft Boiled Egg

A galaxy of color and texture, with a soft boiled egg and couscous, will make this a favorite salad.

Serves: 4

Ingredients:

  • 1 head romaine lettuce, rinsed, dried, and chopped
  • 3-4 medium tomatoes, cut into cubes
  • 1 avocado peeled, cut into cubes
  • 1 cup cooked couscous (I had left over from last night dinner)
  • 1/2 cup fresh sweet pees
  • lemon juice from 1/2 lemon
  • 2-3 Tbsp. Blood Orange Fused Olive Oil or Extra virgin olive oil
  • salt to taste
  • 1/4 teaspoon ground black pepper
  • 4 soft boiled eggs, peeled and cut in halves
  • fresh mint leaves to serve (optional)

Directions:

In a large bowl toss together all ingredients (except eggs) and drizzle with desired amount of lemon juice and olive oil. Serve with soft boiled egg on a top and fresh mint leaves. Have a delicious and healthy lunch!

    The salad looks inviting. The cold, snow and dipping temps are still linering around even though we are officially in Spring. This salad gives the summer feel 🙂

    This is a lovely looking salad Yelena and something that many Northerners would be just desperate to get stuck into. I would personally ditch the egg but the rest is sheer scrumptiousness 🙂

    Good morning!

    It's beautiful, fresh & delicious, I know it as a fact. In Brazil is common to have soft boiled egg in salads, here in America is not, but since I started making it, my American husband fell in love.
    This recipe is one to make, and soon.
